Our History

In 1977, Nan (Don’s mother) took a chance on historic Railroad Square when few others would. She purchased the building that would become Omelette Express at a time when the neighborhood was quiet, the sidewalks were empty, and many storefronts sat forgotten. In our family, we still joke that the little market she bought came with cans of soup covered in three inches of dust.

But Nan saw potential where others didn’t.

With hard work, determination, and a love for bringing people together, she opened Omelette Express and created a welcoming place for locals & travelers alike. What began as one woman’s dream soon became a family tradition.

In 1987 Nan’s son Don took over the restaurant alongside his wife Laura creating the restaurant many know today. Together, they continued the values Omelette Express was built on: generous meals, warm hospitality, and treating every guest like family.

Today, Don and Laura proudly run the restaurant with their children by their side, while the fourth generation grows up surrounded by the same traditions that started it all 50 years ago.

From dusty shelves in a quiet downtown to the busy restaurant we know today, Omelette Express has always been about family, community, and serving breakfast with heart.
